It’s official — fall is here. As the temperatures get (slightly) cooler on the Gulf coast, the kitchen at Seagar’s Prime Steaks & Seafood heats up with some seasonal menu items to please your taste buds. This fall, locally sourced ingredients and seasonal vegetables complement classic dishes from our beloved Gulf coast restaurant.

Below, a preview of some of the new dishes featured on our fall menu. Stop by Seagar’s Prime Steaks & Seafood — a world-class, AAA Four-Diamond restaurant — any Tuesday through Saturday for a taste of everything you’re craving this fall.

Smoked Duck Breast

This fall, get a taste of our 5-6oz duck breast, lightly smoked with herbal tea and pan seared to medium rare. The duck breast is sliced and fanned over a hash consisting of seasonal vegetables including roasted Butternut squash, celery and yellow onion, mixed with smoked bacon and honey to provide a salty and sweet finish. This first course is served with a tart cherry gastrique and finished with leeks dusted in seasoned flour and flash fried.

Panzanella Salad

Chef Guidry’s autumn salad consists of baby arugula, poached Florida Rock Shrimp and green tomato chow chow, balanced with toasted, homemade sweet cornbread. The salad is garnished with corn shoot for the perfect, seasonal finish. The Panzanella salad is a fantastic first course to kick off your meal at our Gulf coast restaurant.

Crispy Calamari

For a fresh take on Calamari, try our crispy version with 9oz calamari mixed and marinated with thinly sliced cherry peppers and house-made bread and butter pickles. The calamari is dredged in buttermilk and seasoned flour, then fried to a nice golden brown and served with a Creole aioli that combines an egg yolk emulsion with lemon juice, whole grain mustard, Tabasco, Worcestershire, and blended oil.

Pan-roasted Grouper

A favorite at Seagar’s Prime Steaks & Seafood, our pan-roasted Grouper will be served with lump crab risotto this season. The 7oz Gulf grouper is lightly seasoned and pan seared, then finished with a whole grain mustard and scallion buerre blanc.

Olive Oil Cake

Don’t forget dessert! This season we’re introducing an Olive Oil Cake, featuring candied Granny Smith apples layered with a cake consisting of homemade lemon curd heavily spiked with vanilla whipped cream.
